Speaker BI've had an interior landscaping company for 40 years.

Speaker AWhat would you say your success to failure ratio is when you're trying to create a new recipe, like a new sauce recipe?
Speaker BI would say I probably write 20 recipes to get one.
Speaker BAnd I have plenty of critics.
Speaker AOh, I'm sure.
Speaker BCritics.
Speaker BYeah.
Speaker BFriends try.
Speaker BThey've been doing this for all these years with me.
Speaker BI let them try.
Speaker BAh, horrible.
Speaker BSo I get a lot of feedback.

Speaker BUltimately I decide, but they helped me get close, and then I finished it.
Speaker ASo if we put your skills to music, what would the music be?

Speaker AIf Leanne declared you supreme ruler of hot sauces for one week, what would you, Dirty Dick, decree?

Speaker AIf you could erase one mistake from your past, what would it be and why?
Speaker BThat's too scary.

Speaker AWhat was the worst place you ever had to cook?
Speaker BIt was down south.
Speaker BIt wasn't the place.
Speaker BThe worst place to cook.
Speaker BIt was the worst place to stay.
Speaker BBecause if you go some of those hotels and motels in Virginia and Tennessee, you know that you go to find a hotel, even in New York, you'd find a.
Speaker BYou know, you don't know.
Speaker BYou're looking at all these lists of motels and you got to book rooms, and then you get there and there'd be someone, you go, did they throw up on the ceiling?
Speaker BYeah.
Speaker BHow could it be that horrible?
Speaker BSo I would say that's the worst part is picking the wrong road.
Speaker AYeah, that's true.
Speaker BFly by night place.
Speaker AThat.
Speaker AThat is true.
Speaker BThey were all pretty the same.
Speaker BPretty much the same.
Speaker AWhen you were competing in barbecue, did you have a favorite event like the brisket or the ribs or whatever, a.
Speaker BFavorite thing to cook?
Speaker BYeah, I would say probably briskets.
Speaker BI like to cook brisket.
Speaker AOkay.
Speaker BThat was the most.
Speaker ABut didn't it.
Speaker BDidn't you win first place at the Jack cooking chicken?
Speaker BYeah, I also.
Speaker BI've done.
Speaker BWon a lot of chickens.
Speaker BYeah, very good.
Speaker BAnd I used to use breasts, roaster breasts.
Speaker BAnd no one ever understood it.
Speaker AYeah.
Speaker BAnd I used to just put sliced white meat in the box and it'd be just like tender and juicy.
Speaker BAnd that won a lot of first places, you know, So I won the most with chicken.
Speaker BBut I like cooking.
Speaker AOkay.
Speaker AWhat's the hardest thing about owning your own business?
Speaker BYou're a slave to it.
Speaker BYou got to keep it up.
Speaker BYou can't.
Speaker BYou know, every day there's something going on.
Speaker BThere's always issues.
Speaker BSo I would just say, you know, you.
Speaker BYou got to do your work.
Speaker BYou gotta work and leave it alone.
Speaker ADo you.
Speaker AYou remember the first thing you ever smoked, grilled, barbecued.
Speaker BWas probably in Montserrat.
Speaker BWe ate a lot of chicken.
Speaker BThat's what they had, Chicken.
Speaker AYeah.
Speaker BThat's what the locals ate.
Speaker BSo that's what you could buy, you know, because the beef, you know, they kill it.
Speaker BIf you go to the.
Speaker BThe market at the.
Speaker BEvery Saturday, they'd, like, butcher a goat and they'd be like, hanging the goat.
Speaker BHanging.
Speaker BIt was kind of disgusting.
Speaker BHe had no refrigeration, so it was rough, you know, if you didn't get There early to buy your meat.
Speaker BI mean, that's how the old Caribbean was.
Speaker AYeah.
Speaker BSo I need that stuff.
Speaker AI was in Mexico.
Speaker AWell, I've been there many times, but I was in there one time and I went to an open air market and I grew up on a farm and we, we, you know, we raised animals to eat and stuff, so none of that stuff bothered me.
Speaker ABut they had butchered a hog and there was, you know, the ribs and some shoulders and the standard stuff, if you will.
Speaker AAnd then there, then there was the entrails.
Speaker BYeah.
Speaker AThen there's the organs and then there was the head.
Speaker AAnd this head was huge.
Speaker AAnd I did.
Speaker AAnd there was flies and all over.
Speaker BOh, my God, I remember the flies.
Speaker BAnd then it was gross.
Speaker BThey had no duration.
Speaker AYeah, yeah.
Speaker AGod, I remember that.
Speaker AIt was just like it was yesterday, right?
Speaker AYeah.
Speaker BLives were a lot harder than us.
Speaker AWhat do you think was the biggest mistake you ever made in a barbecue competition, if you made any at all?
Speaker BOh, I made plenty.
Speaker BI would much smoke.
Speaker BThat was a big deal.
Speaker BAnd you don't want to drink too much the night before.
Speaker BNo, you want to concentrate on the.
Speaker BThe smart guys didn't overdo it.
Speaker BThey concentrated on the cooking.
Speaker BI'd say that was a big deal, is concentrate on what you're doing and not, you know, it's not a party thing.
Speaker ASo kind of like a four beer limit or something, you know, however you.
Speaker BDo it, you don't want to lose control.
Speaker ARight.
Speaker BYou want to concentrate on what you're doing.
Speaker AI get it.
Speaker ADid you, when you were judging a lot, did you.
Speaker ADid you have a favorite area or competition that you like to judge at?
Speaker BYou mean a contest or a category?
Speaker ANo, a contest.
Speaker BWell, we used to have this local grilling contest, the Pig and Pepper.
Speaker BAnd I always competed in it, but once I stopped, I used to like doing that.
Speaker BIt was kind of the local place.
Speaker BAnd of course, Jack Daniels.
Speaker BOh, yeah, that's a pinnacle.
Speaker AIs that your favorite, Leanne?
Speaker AThe Jack.
Speaker AOh, yeah.
Speaker ABecause you've judged it a bunch.
Speaker AYeah, yeah, yeah.
Speaker BNo, it's.
Speaker BI think it's the hot, the best food.
Speaker BThis is a lot of every contest, you know, a third of them are newbies and they really don't understand.
Speaker ARight.
Speaker BSo you gotta deal with those guys.
Speaker BYou're gonna try to be fair to the people that don't know what they're doing.
Speaker BAnd so you just have to realize that kind of be kind.
Speaker ASure.
Speaker BMost people.
Speaker AWell, let's go back and see if we can find out if you want to if you could erase one mistake from your past.
Speaker ANow, I gave you some time to think about it, which I'm sure you probably didn't.
Speaker ABut.
Speaker BI think I should have stayed in school longer.
Speaker BI should have got in, you know, So I got a degree in economics.
Speaker BI wish I went further.
Speaker BI thought if I.
Speaker BWe should have got a master's degree and should have taught it.
Speaker BThat's what I think I should have done.
Speaker AWhere did you go to school?
Speaker BBoston State College.
Speaker ADid you then?
Speaker BI used to take classes at Harvard at night, and I did.
Speaker BI studied a lot of real estate, like, I used to har.
Speaker BAt night, study real estate.
Speaker BSo I.
Speaker ARight.
Speaker BBut that was.
Speaker BThat was interesting.
Speaker ARight.
Speaker AOkay, last question.
Speaker ALast question, Dick.
Speaker BAll right, I'm ready.
Speaker AWhat would.
Speaker AIf you were on death row, what would be your last meal?
Speaker BI like a black and tenderloin with remoulade and probably baked potatoes and sour cream.
Speaker AYeah.
Speaker BIt's delicious.
Speaker AYou can order as much as you want because they can't tell you to slow or speed up eating, you know, so you can.
Speaker BAnd hopefully they cook it right.
Speaker BYeah.
Speaker AI don't know if you can send it back to the kitchen when you're in that situation or not.

Speaker BMaybe they put a little extra effort in it.
