When I went to CBC earlier this year, Craft Brewers Conference

talked with the people from Berkeley Yeast up in Berkeley, California,

and they are insanely smart nerds

and they have genetically engineered yeast

to give off the same

Speaker:

like Essence Styles is what they're called

Speaker:

into the beer as like tropical hops give to it

Speaker:

so think mosaic thing Nelson yeah.

Speaker:

Who now.

Speaker:

So when the when the yeast is fermenting it's giving off these same flavors

Speaker:

and it's also very hazy.

Speaker:

So we used that yeast in the batch of our trans side and it is just,

Speaker:

it's, it smelled like

Speaker:

a fruit salad like coming out of the day before it was even dry hot.

Speaker:

It was so fruity.

Speaker:

So we're really excited for that.

Speaker:

So it's our first ever, ever like actual hazy IPA

Speaker:

using this fun new use from Berkeley yeast.

Speaker:

Did you brew it exactly the same way just swapped out the yeast with.

Speaker:

Yes, we just started the yeast and I did remove the bitter and hops.

Speaker:

Okay.

Speaker:

So we took it so hazy IPA aren't bitter.

Speaker:

So we took out we took out the bitter hop editions in the, in the early boil

Speaker:

and just did all whirlpool but the same exact whirlpool hops

Speaker:

so it's still the same cryo hopped monster some common technique equal not.

Speaker:

Did that did that hurt you a little bit to do that.

Speaker:

You know.

Speaker:

We'll see.

Speaker:

It's still in the tank.

Speaker:

It was my idea because I was so I was so excited

Speaker:

trying this new product when when I sampled a beer from them

Speaker:

using, you know, this this new tropical yeast training they have

Speaker:

I it tasted like one of the happiest things I've ever had.

Speaker:

And they didn't brew with any hops. Wow.

Speaker:

So all the flavor and aroma is just coming from this wild,

Speaker:

genetically modified yeast.

Speaker:

That's insane.

Speaker:

Yeah. Yeah. So I almost didn't believe them.

Speaker:

And then, you know, when we brewed this batch of beer,

Speaker:

it was overwhelmingly tropical and hoppy and fruity.

Speaker:

So we're really excited.

Speaker:

I'm I'm excited for it. Yeah.

Speaker:

I mean, I don't know how I'm going to get down there,

Speaker:

but I'm going to I'm going to try. Try this bad boy.

Speaker:

I'm not a fan of shipping crawlers.
